Breakfast "eggs": serves 2


Ingredients: 6 Oz tofu (I buy the packages that are split), turmeric (1 tbsp), organize peanut butter (2-3 tbsp), purple cabbage, fresh spinach


Directions:

-dry out tofu (or you can cook it longer)

-create paste by mixing turmeric, warm water and peanut butter,

-squeeze tofu into crumble and cook in heated pan. I just cook it in olive oil.

-once tofu is browned, add peanut butter paste, combine and cook about 3-5 minutes

-add cabbage and cook another minute or so until tender

-add spinach and season with desired amount of salt
